Individual Mexican Pizza's

I love mexican food, the flavors are so appetizing!!
Lately, I've been trying to eat things that have lots of vegetables in it without noticing.
This recipe is heathly and kid friendly.
My nephew Tristan was helping me decorate the pizza's with everyone's order of what they wanted on top. He had so much fun!

What you need:
  • 1 lb. ground beef (we use orangic)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1 tablespoon chilli powder
  • 1 tablespoon cumin
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped yellow onions
  • 1/2 cup chopped green onions
  • 1/2 cup black olives cut in slices
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded pepper jack  cheese
  • 1 bag of corn tostada's
  • 2 cups salsa
  • 1/2 cup sour cream

Directions:

1. Preheat oven to 350 degrees

2. Cook ground beef, while cooking add seasoning; salt, paprika, chilli powder, and cumin

3. Drain ground beef from pan

4. On 2 cooking trays place tostadas in rows of 3.

5. Layer one side with salsa

6. Layer ground beef over the salsa

7. On the other side spread sour cream

8. Place the sour cream side down on top of the beef and salsa. (making like a sandwich)

9. Spread salsa on top.

10. Cover in this order; cheese, onions, tomatoes, black olives, and green onions

11. Bake for 8 minutes

12. Serve!!!

For an extra twist let guests put lettuce inside their individual pizza.
(you can't put lettuce in the oven though)

Enojy!!!!
